UK Royalties’ top chef to showcase authentic Moorish cuisine in Carousel

Mark your calendars as Spanish guest chef Esmeraldo Oteruelo, billed as the top culinary choice for Queen Elizabeth II and King Juan Carlos presents a sumptuous Moorish feast from 21 July to 18 August.

Royal Plaza on Scotts once more invited the distinguished Spanish chef to exhibit his forte in seafood in a variety of Moorish highlights such as Paella Morisca (Moorish seafood paella), Lubina Charmula (charmula seabass) and Vieras Mozarabes (sea scallops with saffron sauce). Other signature dishes to look out for include Carrillera de Ternera Tajine (Moorish-style veal cheeks) and Tajine de Pisto Manchego (vegetable stew).

Chef Esmeraldo has culinary experience spanning the globe from Switzerland to Indonesia. Seafood is the chief ingredient in his book of recipes and the chef believes in simplicity in the preparation to retain its natural sweetness and freshest flavours.

His expertise in his home country’s cuisine is evident from the accolades and testimonials he has received over the past 30 years, being the top culinary choice for Queen Elizabeth II and King Juan Carlos among other prominent figures from all around the world.
